Michelle (Tink rules) introduced me to your thread. Aside from that fact that there were 65 pages to get through, I kept getting myself sidetracked reading the trip/food reviews in everyone's signatures :rotfl2: So, I'm finally done ;)

Unfortunately I don't use Facebook. I spend a ton of time on email at work, so knowing myself the way I do, if I had Facebook to keep track of I'd never get any work done :rotfl:

Cauliflower and Chickpea Stew with Couscous

2 Tablespoons olive oil
1 medium onion, chopped
1 ½ teaspoons cumin
½ teaspoon ginger
salt and pepper
1 28-oz can whole tomatoes
1 15-oz can chickpeas, rinsed
1 head cauliflower, cored and cut into small florettes
½ cup raisins
1 5-oz package baby spinach, chopped
1 cup couscous

Heat the oil in a large saucepan over medium heat. Add the onion and cook, stirring occasionally, until beginning to soften, 4-5 minutes. Add the cumin, ginger, ¼ tsp salt and ¼ tsp pepper and cook, stirring until fragrant, 1 minute more.

Add the tomatoes and their liquid, crush the tomatoes with your hands as you add them, chickpeas, cauliflower, raisins, and ½ cup water, and bring to a boil. Reduce heat and simmer, stirring occasionally, until the vegetables are tender and the liquid has slightly thickened, 15-20 minutes. Fold in the spinach and cook until just wilted, 1-2 minutes more.

Meanwhile, place the couscous in a large bowl. Add 1 cup of hot tap water, cover, and let sit for minutes; fluff with a fork. Serve with the stew.

I didn't use onion, since onion and I aren't friends, but did add some onion powder for flavor. I also used a few cloves or garlic, I didn't think to add the garlic until I had most of the ingredients in, but next time I'd add them to the olive oil in the first step. Also forgot to crush the tomatoes with my hands, so ended up mashing them with a potato masher! I thought the whole thing needed a bit more spice, so added about 1.5 teaspoons of mixed Italian seasoning. I also used a whole box of couscous so I'd have some left over. This makes a generous pot of "stew"!

I am a former vegetarian (of seven years) who now loves things like raw meat! Bring on the carpaccio! :rotfl2: But I still like to eat and cook meatless things as well.
