Bellini

Very good:

A true Bellini is made with the nectar of white peaches and Italian sparkling wine. Over time the recipe has seen more than a few variations .
 
I've had several different versions, and all were good. But my favorite was the frozen bellini at Oregano's restaurant in Phoenix. I didn't have one on DCL - have to put that on my to-do list for next time!
 
They are very good! I've had the one from Palo - done the traditional way, sparkling wine and a white peach puree - no sweetener or anything (it's not a pina colada, hehe) - but refreshing and tasty!
 

I believe the type of sparkling wine they're traditionally made with is Prosecco. Sort of gained in popularity over the last few years, so it's easier to find in wine stores than it used to be. It being peach season, you could make your own :thumbsup2 Though white peaches aren't sold widely like yellow peaches are, I think I've seen white peaches at Whole Foods before.

When made right, Bellini's are just so light and refreshing. Mmmmmm. I've had them at breakfast, lunch AND dinner (not all in the same day of course ;) ) , but boy are they best with brunch. What a kick to the day :goodvibes
