Beignet question from POFQ

DH and I tried the beignets at POFQ and they where hollow inside. I mean big hollow space. I was wondering if they where supposed to be that way? I was picturing it more donut like not a puff with a big hollow spot inside and a thin outside with powdered sugar. I saw the ladys flatten the dough before they fried them and thought that was weird.Thnk that cause them to be hollow and not puff in layers. DH said it would have been better if it had a filling in to fill in the huge space.
 
Yes that is how they are supposed to be, like fried dough not like a funnel cake
 
Beignets are square hollow fried dough with powdered sugar on top. They flatten the dough to cut it into squares. In New Orleans, we just eat them with powdered sugar on top. However, in Houston there was a place that served non-traditional beignets with chocolate & caramel dipping sauces.
