Beef roast I need new way to cook it.

It seems that the cream of mushroom soup I've poured over my roasts no longer agrees with us.

I've done the roasts in crockpot with taters, carrots, onion, celery an sometimes mushrooms then the cream of mushroom over the top.

AS I said the mushroom soup just not getting it no more.

I HATE brown gravys an cannot eat tomatoes.
 
If you want to make sandwiches out of it, try this in the crock pot:

beef roast (2 - 3 lb.)
can of beef broth
can of french onion soup
can of beer

cook on low all day and then shred for sandwiches. Couldn't be any easier. You can add sliced onion to the crock pot as well.

Place your roast in your crock pot.

Mix together 1 packet brown gravy mix, 1 packet ranch dressing mix (dry) and 1 packet Italian dressing mix (dry). Add 1/2 cup water. Mix thoroughly. Pour over roast. At this point you can add carrots, onions, potatoes.

Cover and cook 5-6 hours on low, or until meat is done.

So yummy! It's my go-to roast, now!
 
Oven 350 an hour or hour and a half depending on size.

I really don't prefer crockpot cooking.
 
I never use cream of anything soup on a beef roast or Italian dressing.
In crock pot it is very easy. Dredge the roast in a flour w/ salt and pepper mix. Brown on both sides. Put in crock pot. Add about a cup of water. Set on low for 6-8 hours. Add some carrots/potatoes/onion about 5 hours in if you want. Remove everything, leaving juice. Turn on high. Add a little flour\water mix to thicken for gravy.
The other recipes are good but too much sodium for us.

That's how I do mine except I use the onion soup mix @ the start instead of onions.

I use a table top roaster to cook roasts. I put some water in, sprinkle with salt, pepper and garlic powder and a whole cut up onion. I start the temperature at 450 degrees for one hour then 350 for 3 hours. Then, I use my hand blender, blend all the juice and onions and then thicken for gravy.

This is absolutely the best and I don't even like pot roast.

I often make a nice and very easy beef roast with:

1/2 package of onion soup mix
fresh sliced onions (enough to layer the bottom of the soup pot)
ketchup and/or chili sauce
1 can of cranberry sauce (the kind with whole berries, not the jelly)

Sounds weird I know but it really is delicious.
 
I have a cola roast recipe which I love! PM me if you would like it. I am nowhere near my recipe book so I can not post it right now.
 
This is the recipe I follow for roast beef. I season with kosher salt, pepper, crushed garlic & minced onion. I use jarred gravy but first I'll cook some onion and garlic in a little oil along with any pan drippings. Once the onion is translucent, I add the gravy and bring that to a boil.

For pot roast, I make it Italian style with tomato sauce, onion, carrots and some red wine. I brown the meat first then let it everything simmer in a covered stock pot until it's cooked through.
 
I used the dry packet of Lipton onion-mushroom soup. I rub the beef, throw in a pan with olive oil to sear on both sides. Toss in oven or crock pot add veggies and done.

However since you say you do NOT like brown gravy, you can skip the all the seasonings and just toss in with chopped onions, salt, etc. I would try it that way to see how it goes.
