BAILEYS CHOCOLATE MARTINI

1 part Baileys
1 part Smirnoff® vodka
1 part creme de cacao

Shake well, serve straight up or over ice
and garnish with a cherry or strawberry.
 
I'm feeling a little stressed today ... maybe a Bailey's Chocolate Martini will un-stress me!

the Amarula he had at Boma in June. He even had to special order it from the liquor store. :p IMHO it has a smoother taste than the Baileys. Why not give it a try? Of course to REALLY do it justice, try it at AKL's Boma!!!!
 
That chocolate martini sounds good. But I must admit I'm not a normal martini drinker, but I just might try it.

Another Bailey's drink I do like is a shot of Bailey's and a shot of Kaluha over ice. Very smooothh...polished off a bunch of these for the first time on a cruise to Bermuda.

Yeap that sounds about right Beanie, cause after 8 I could barely walk out of the lounge on the boat and make my way back to the cabin. Thank goodness this was the way down to Bermuda cause the way back I would have been bouncing even harder off the walls. DH thought it was quite funny though.

The ones that go down to easy always get me in trouble.:rolleyes:
 
Isn't that the truth?? Wine does it for me, it goes down so fast and so smooth that after a few, I forget how many I had! LOL

I should probably stop replying to these posts, you all are going to think I am a big alchie! LOL

Of course, I am talking about when I go on vacation...:o

here a few recipes to savour

BAILEYS CHOCOLATE MARTINI

1 part Baileys
1 part Smirnoff® vodka
1 part creme de cacao

Shake well, serve straight up or over ice
and garnish with a cherry or strawberry.

Baileys® Milkshake

1 measure Baileys® Irish cream liqueur

3 measures milk

2 measures chocolate ice cream

1 dash vanilla essence

2 dashes rum essence


Bailey's Irish Cream Fudge

Ingredients:

4½ cups sugar
1 can (12 oz.) evaporated milk
½ lb. butter
2 pkgs. milk chocolate chips
1 pkg. semi-sweet chocolate chips
2 jars (7 oz. each) marshmallow cream
2 tsp. vanilla
2/3 cup Bailey’s Irish Cream
2 cups chopped nuts (optional)


Method:

In a large bowl, add chocolate chips, marshmallow cream, vanilla, Bailey's Irish Cream and nuts. Set aside. Heat butter, sugar and milk to a boil, reduce heat and cook slowly for 11 minutes, stirring constantly. Pour milk mixture over the ingredients in bowl and stir slowly to blend. DO NOT USE A MIXER. Pour fudge into a buttered 9x13-inch pan and chill. When fudge is cold, cut into uniform pieces. (Fudge will stay soft, and not completely harden.)

Makes approximately 5 pounds.


Bailey's Irish Cream Cheesecake

Categories: Cheesecake
Yield: 12 Servings

CRUST
1 1/2 pk Graham crackers; crushed
1/3 c Sugar
6 tb Butter; melted

FILLING
24 oz Cream cheese; softened
1 1/2 c Sugar
3 T Cocoa
1 pt Whipping cream
5 Jumbo eggs separated
2 Env. knox gelatin
1/2 c Bailey's irish cream

Prepare crust:
Combine graham crackers, 1/3 cup sugar and 6 tb butter. Pat into bottom of a cheesecake pan and bake at 350 F for 10 minutes.

Prepare filling:
Soften gelatin in small saucepan with 3/4 cup water. Stir egg yolks into 1 cup sugar. Add to gelatin mixture and cook over med. heat. stirring constantly until mixture thickens and bubbles. Cool.
Beat cheese in large bowl until light and fluffy. Add cocoa and beat again. Add Bailey's and beat some more. Slowly add gelatin mixture and blend well. Beat egg whites until soft peaks form. Add remaining 1/2 cup sugar and continue beating until stiff peaks form. Fold into cheese mixture. Whip cream and fold into cheese mixture. Pour into crust and refrigerated several hours or overnight.

I'll have to make them for the holidays. Always looking for something new to try on my family. Will have to make some regular fudge for the kids though, but maybe not.;)

I'm glad you really enjoyed that Denise. I usually go easy on the boose cause I'm always the one driving, but I only had to walk to my room on the boat. I also don't like getting sick so for fear of it I go easy. I guess I forgot about it that night.

At least I did better than my mom who on her trip to Bermuda she headed back to the room before everyone else after partying and they found her still riding in the elevator when the doors opened. That was over 20 years ago and we still pick on her for that one.;)
