We're going to be renting a car when we go and we would like to have a day in between to de-disney ourselves. As much as I would like to go, go, go, I know that the kids will have their limits. Are there any good beaches nearby that we could spend some time at so the kids can unwind?

Depends on your definition of "nearby." There's New Smyrna, Daytona, Vero, St. Augustine, etc. on the East Coast, and then there's Clearwater, Venice, etc. on the West Coast.

I am certainaly NOT an expert, but I plan on going to Kennedy Space Center which is 50 min away, and more or less pretty close to several beaches in the vicinity (same time frame, give or take some minutes).

Make sure that you get to the space center early... As it can close as early as 2pm. Also if there is not a launch going on it is manly looking at pictures.. My ds2.5 and I got a bit bored....
