I'm curious about the BOG CC hold policy. Let's say you get an ADR for five people and one person cannot make it the day of the reservation, will Disney charge you for that person? Or, will they only charge you if you cancel the entire reservation?

No, they do not. As long as someone shows you will not get charged the no show fee to your credit card.

Only half of our group could go, no charge.

You can cancel the entire reservation without a penalty provided you do it before the deadline. You will only be charged if you fail to cancel the reservation before the deadline (day before the res) and then no one shows up at the restaurant.
