Base tickets - can you leave park and come back same day under same ticket?

For example we're planning a day in MK but want to leave to dine at one of the monorail resorts and come back to MK shortly after. Can we do this or once you leave the park that day, that's it for that day's park ticket?

Yes, absolutely. You can go in and out of same park.

Also remember you only have to pay for parking once a day as well, no matter if you park hop or go back to the same park
