Baking With Fresh Eggs?

Anyone out there bake with eggs from your own hens? I am asking because I am making cookies with egg whites, cream of tatar, sugar & vanilla. They aren't coming out right & I am thinking maybe it is because the eggs are from our chickens & they are too fresh. Any thoughts?
 
I have only baked with fresh eggs once and it has been 30 years. My dad lived on a farm and we were making cookies and didn't realize we were short a couple of eggs. Ran out to the hen house and found exactly 2 eggs. The cookies were fine.

I bake with fresh eggs only and everything turns out fine. How old is your cream of tartor?

Just bought it the other day.
I can't figure out what is wrong. They are supposed to be airy & instead the middle is chewy. I need these for my DS's school tomorrow. Maybe I'll run to the bakery in the morning. I have to clean up the kitchen & get ready for bed now. I will be buying eggs & making again just to see if it could be the eggs.
 

You are so lucky to have your own hens! I grew up with chickens, and when we finally had to go to store-bought (our big dogs were let into the chicken pen by the adult male formerly in the household) they just tasted like rubber.
 
My mom bakes with eggs from her hens all the time. I have, too, never with any untoward results (well, there were some cookies that were a little more yellowish than usual due to the high corn content of the hens' diets, but it was barely noticeable.)

Thanks, but I don't think that is it. It has been very cold here the past few days, so the heat has been up & I think it feels dry.

The last time I made these cookies was a few years back, before we had chickens. That is why I was leaning torwards the eggs.
Maybe it was the pure vanilla extract that I have had for quite some time.

We love our chickens! Some of them are so funny!
