I found a yummy sounding peppermint cookie recipe here on the DIS (make with white cake mix...blah, blah) and it called for peppermint chips (like Nestly choc chips I'm guessing), which I swear I've seen before in the stores, but of course now that I am looking for them, I'm haven't seen them anywhere. I am still keeping my eyes open, but in the event I don't find the, was wondering if there is a substitute? I found Andes peppermint candies yesterday (the red & white chocolate) and I wonder if I can chop those up and use them instead?

Thoughts? Suggestions? Thanks!

I purchased mine at Aldi's last year. I bought extra as it was the only time I have ever seen them. I have one package left. Good luck on your search.

Just a thought maybe they meant candy cane pieces? Sorry if I'm causing confusion.

Hmmmm. Not sure.

Why don't you post the recipe? That might help.

Peppermint chips as in like chocolate chips or peppermint chips as in the round peppermints smashed up?

Or is the reciepe callling for peppermint bark?

Post the reciepe or a link, we might be able to offer you alternative suggestion.

Amy

I think you would be fine with the Andi's mints chopped up. I have chopped up candy bars to substitute for chocolate chips and it always works out fine (usually better in fact).

Giadardelli makes a yummy peppermint bark... I'll bet that would work.

Good luck in your peppermint chip search. Sorry to digress, but could you possibly post the recipe? Those cookies sound fairly easy since the base is a cake mix, not to mention yummy!

Its early for the stores to be carrying Christmas candies & baking goods yet, when right now they are stocked for Thanksgiving. Can you wait another week or two? They'll most likely show up.

Here's the recipe (below). I think I need peppermint "smooth" chips for the mix and then crushed candy canes for the tops. I can wait and am still looking (will look at the Ghiradelli stuff too next time I'm out) and am not in a rush yet, but was wondering what I can do to sub if I end up having to do that. Thx for all the replies:

Disclaimer - I got this basic cake/cookie recipe and the peppermint idea off of another DIS thread :thumbsup2

WHITE cake mix with peppermint (found pretty peppermint chips at the store!) frosted with white frosting and sprinkled with crushed candy canes,

Basic “cake cookie” recipe:
1 pkg dry cake mix (any flavor, any brand!)
2 eggs
1/2 cup of oil (or melted butter or margarine for more buttery flavor)

OPTIONAL: Your choice of add-ins!

Mix these ingredients together (INSTEAD of the usual ingredients listed on the box for making a cake.) You will get a very stiff mix instead of batter. This is right.

Roll into balls, flatten slightly onto greased cookie sheets OR drop by spoonfuls onto greased cookie sheets.

Bake at 350 for 7 to 10 minutes.
Can be frozen either as dough or baked cookies
