Baked Mashed Potato recipe?

We will be having a meal here next sunday for relatives that have come for our DD's wedding and I've been searching for a good Baked Mashed Potato recipe, so I thought I'd ask on here if anyone has a great recipe they'd like to share. I was thinking one with cheese would be good!

Make Ahead Mashed Potatoes

10 large potatoes, peeled and quartered
1 cup (8 oz) sour cream
1 pkg (8oz) cream cheese, softened
6 tablespoons butter, divided
2 tablespoons dried minced onion
1/2 to 1 tsp salt
Paprika

Place potatoes in dutch oven or large kettle, cover with water and bring to a boil. Reduce heat; cover and cook for 20-25 minutes or until the potatoes are tender. Drain and place in a bowl; mash. Add sour cream, cream cheese, 4 tablespoons butter, onion, and salt; stir until smooth and the cream cheese and butter are melted. Spread in a greased 13x9x2 inch baking dish. Melt remaining butter; drizzle over potatoes. Sprinkle with paprika. Refrigerate or bake immediately, covered, at 350 for 40 minutes; uncover and bake 20 minutes.

I usually add some shredded cheese during the last 5 minutes for more of a "twice-baked" type of dish.
 
Fulffy Potato Casserole (serves 10 - 12)

5 pounds of potates, cooked and mashed
8 oz room temperature cream cheese
1/2 stick butter or margarine, melted
1 small onion, very finely chopped
2 eggs
2 TBS flour
salt and pepper
small can of french fried onion rings

In a large bowl beat everything except the onion rings until blended. Beat
at high speed until fluffy.
Bake in a greased 9X11 inch baking dish at 350 degrees for about 40 minutes
(longer if cold to start with). Top with onion rings for the last few
minutes.
 
When I make baked mashed potatoes, I usually just prepare my usually mashed potatoes using fresh potatoes. After I mash them, put them in a baking dish and sprinkle grated medium cheddar cheese and bake until cheese is melted.
 

Thanks everyone!!! It all sounds yummy!!! Maybe I will need to make a couple of different dishes of it!!;) Since we'll have about 15 people here I had planned on having to make 2 anyway!
 
I make the "Make Ahead Potato" receipe posted above.

It is SO good, and the best part is you can make it a day ahead of serving and refrigerate it. Let sit out 30 min before baking. I leave the cheese topping off tho.

Microwave leftovers easily.
