Baked Mac and Cheese Recipe

Taken from "Southern Living Light & Easy Comfort Food" book

4 cups hot cooked elbow mac (8oz uncooked, cooked without salt or fat
2 cups (8oz) shredded reduced fat sharp chedder cheese
1 cup 1% low-fat cottage cheese
3/4 cup fat-free sour cream
1/2 cup fat-free milk
2 tablespoons grated fresh onion
11/2 teaspoons reduced calorie stick margarine, melted
1/2 teaspoon salt
1/4 teaspoon pepper
1 large egg, lightly beaten
cooking spray
1/4 cup fresh or dry breadcrumbs
1 tablespoon reduced-calorie stick margarine, melted
1/4 teaspoon paprika

1. preheat oven to *350*
2. combine first 10 ingredients; stir well. spoon into shallow 2 quart casserole coated with cooking spray.
3. combine breadcrumbs, 1 tablespoon margarine, and paprika; stir well. Sprinkle breadcrumb mixture over casserole. Cover and bake at 350* for 45 minutes. Uncover casserole; bake an additional 5 minutes or until breadcrumbs are lightly browned. (yeild: 6 servings sz 1 cup)

we love this recipe! we put all the fat in too it is so good with the topping

I'll try and remember to post if it's good or not. I have a loaf of Cracker Barrel bread and some leftover pork roast so tonight we're going to have barbecue pork on toasted sourdough bread with mac/cheese on the side. Tomorrow I'm thinking I'll butter the bread, cube it and top the mac/cheese with it and bake it for a few minutes to toast the bread.....yum!!!! We're on fall break so since we can't afford to be at Disney this week we're eating like we're on vacation!:goodvibes
 
Wow, thanks for all the quick responses! All the recipes look delicious. Now, I just have to pick one. My family are not big mac and cheese eaters, so I think I'll pick a recipe that sounds yummy to me. :laughing:
 

Yes - very easy. One box of whatever noodles you like, a jar of Ragu cheddar cheese sauce, shredded Tillamook cheddar mixture, some minced garlic, a little bit of chopped onion, salt & pepper - mix it all together - put it in a pan, top with some more of that Tillamook shredded stuff - bake at like 350º until the cheese on tops looks 'baked'.

My mother's recipe, so it's not exact -

In the baking dish, mix

1 lb pre cooked elbows ( I also like cavatelli or rotini)
1/2 cup milk
hand-shredded deli American cheese, and/or any shredded cheese you have on hand, maybe 1/3 lb,
1/2 cup plain bread crumbs (more or less as you like)

Mix all together

baked at 400 until cheese melts. Broil for a couple of minutes to get the top crunchy, and serve.

Not a very exact recipe, as it's one of those I just picked up watching my mother do it!

I have a no cook recipe [don't need to precook the pasta] and it turns out heavenly!

Pour 1lb box macaroni into buttered casserole dish.

Shred up to 1 1/2-2 blocks of 8oz cracker barrel sharp cheese over the macaroni

Insert slices of butter from 1 stick

Cover with Milk

Bake 350 for about an hour.

Seriously, it is SO EASY and SO GOOD!:thumbsup2

Do you stir this occasionally to distribute the butter? This sounds yummy.
 
I've made homemade mac and cheese twice.

First--Recipe on Green Creammette elbow macaroni box. Followed exactly and it turned out great.

Second--I wanted to outdo myself so I tried Alton Brown's recipie (you can find it on FoodNetwork.com) after hearing rave reviews. I have no doubt it's a good recipie, but I think I had troubles following the directions to make the sauce because my sauce separated. Tasted great, but very odd texture.

Next time I'm making the one on the macaroni box--tried and true!
 
I use the recipe on the back of the macaroni box with 2 exceptions 1. I do not add any mustard and 2. instead of bread crumbs, I use crushed ritz crackers with tiny dots of butter as my topping and it comes out delish!
 
my kids love my mac and cheese and it is dang good.
1lb pasta (I live medium shells) but it does matter. Cook and drain.
1 package shredded cheddar cheese
1/2 package shredded mozzarella cheese
4 slices of american cheese
1/3 cup parmesan cheese
I heat about 4 tablespoons of butter and then add cheese and melt.
I had about 1/2 cup milk - enough milk to make the cheese sauce smooth and loose not to runny. Add salt, pepper, onion powder, and a little garlic powder. Add the macaroni to the cheese sauce and coat.
Top w/italian bread crumbs
Bake 30-45minutes at 350 in 8 x 8 baking dish.
Delish -they can't get enough at our house.

what size packages of cheese?
8 oz ( 2 cup size)
or 12 or 16 oz?
 
Quick, easy & inexpensive - You'll need
1 lb elbow macaroni
8 oz of mozzerella
1/2 to 1 stick of sharp cheddar cheese
milk
butter

boil 1 lb of macaroni
butter bottom and sides of large baking dish
cover bottom of dish with a layer of macaroni
add a layer of mozzerella cheese
sprinkle in some cheddar cheese
add another layer of macaroni
add rest of mozzerella
add rest of cheddar cheese
pour some milk in to slightly cover bottom of dish

Bake at 350 (I think) for approximately 20 minutes until top begins to brown
 
Hi I have a great one! My whole family likes it and with 6 kids it's rare to get one we all like. Makes a lot!

boil 1 lb (more if you need a bigger portion) elbow noodles until just undercooked.

In pot mix noodles with 2 cups of colby jack cheese (I always add more to make it cheesier).
add 1 can of Italian seasoned chopped tomatoes, and chopped up ham(I use ham steaks). Mix all together put in baking dish and sprinkle Italian seasoned bread crumbs on top. Bake at 350 for about 20 min or until cheese is melted all the way through.

It is super easy and makes great leftovers.
 
Here is my recipe

1 box pasta
2 cans campbells cheddar cheese soup
1 8oz bag of cheddar cheese
1 to 1 1/2 soup cans of milk

Boil pasta and drain
add the cans of soup to pasta
add the cans of milk
mix in half the bag of shredded cheddar cheese.
Stir
top with remaining cheese
bake 325 for 30 minutes with foil on top.
remove foil and bake 5-10 additional minutes to brown.

It is really easy and simple to make

Many of these recipes sound great! We cook at work every weekend and I need something quick and easy and not too terribly expensive. Going to try several of them out! Thanks.
