I cut all boneless chicken breasts into strips. They cook faster (about 10-15 minutes), are easier to not overcook, get more flavor coverage and the best part.....we always eat less. If I have four chicken breasts, my family of four will sit down and eat them. If I cut them into strips, we end up with one or two portions left over.
I always bake them at 350 for about 40-50 minutes (but I tend to like my meat dry-ish). You could also sprinkle some parmesan cheese over them before baking. Or, mix the parmesan with some bread crumbs and coat the breasts with the mixture before baking.
Like I said, I like them dry-ish, but still tender. Around 45 does the trick for me. Now if they breasts are smaller and I don't coat them, usually they're done in about 35 or 40 minutes.
