Bacon Cheddar Grits

Hi! We are 35 days out from our trip in October and I have been dreaming about the cheese grits from The Wave for a solid 365 days. I'm getting nervous now because I don't seem to see them on the menu anymore?! Someone please help! Can anyone confirm that they were indeed there recently or still on the menu?! We generally get them from the buffet on our first breakfast of the trip! I'm big on tradition and this is 4 years strong of having The Wave breakfast buffet before our first Magic Kingdom day!
 

I am confused by grits.
Because, it's essentially like porridge, isn't it?
But, y'all have it with cheese, and bacon or shrimps and stuff?
How is that nice?
(this is a genuine question by the way, I have never eaten it, we don't have it here, and I don't like porridge)

Yes, grits are 'corn porridge'. They were originally a Native American food, now popular in the south.

I think it's the case of people taking a simple comfort food and jazzing it up. Think bread pudding (originally made with stale bread) with chocolate and raspberries.

And yes, shrimp and grits are great! Somehow, the soft/bland grits seem to make the shrimp explode with flavor!

Grits (finely grinded degerminated corn) are traditionally served with lots of salt & butter. You almost never see grits served sweetly. We Southerners often like to make them more savory with things like cheese & bacon or seasoned shrimp in a sauce. Some Texans also eat them with meaty chili. We ate at the Wave on Friday & I was delighted to see grits back on the lineup. My DS ate two bowls!
