How easy or difficulty is it to find a reservation last min or not far in advance? I live a few hours from Orlando. So my thoughts in buying DVC would also include the idea that I could be super flexible in not caring what resort I get or the specific date.... Is this at all a realistic thought? Maybe we want to get out of time some time in the month of X ? Thoughts? Experience with this? thanks in advance!

DVC typically works best for people who plan ahead. Once you're within 60 days of check-in, DVC considers any unbooked rooms "breakage," and they become available for either cash rent or points. The most likely resorts to be found within 3 months most of the year are Saratoga and Old Key West, with some Animal Kingdom, and a day or two here and there as split stays elsewhere.
 
Welcome to the DIS. Being flexible on what resort you are willing to stay at is a biggie. On top of that though, is the question of whether you would be flexible on the room size? Would you be willing to do split stays? The biggest hurdle would be time of year. For example last minute Christmas trip, probably no way. DVC busy time is not necessarily the same as Disney busy times, though quite honestly Disney doesn't really have slow times anymore!
 

If you're just going to look at last minute and then go if it's there I think you'll have some decent luck. It will be better during the first 9 months of the year and sometimes it will be 1BR's. The chart linked is for 7 month availability which I don't think is actually applicable to what you are asking. People still cancel all the time right up until the day before check in. It's not 100% guaranteed but I've often added a night or two when we've decided to arrive earlier.
 
Food & Wine wouldn't be a good time to try your short term reservations.
 
There have been people who have reported no room at the inn, and there are people who get what they want.

The thing to watch is wasting points. You want to be careful if you have points that expire that you get them used - at the end of your use year this might be tough if availability is a problem. Its hard to plan for banking when you don't know when you'll go - and if you don't bank, and there isn't availability when you can take a trip, you may be out of luck.

I wouldn't buy in if you plan to routinely reserve at much under 7 months no matter the rest of the number crunching.
