Which attractions in the parks close earlier than the rest of the park? I don't want to miss anything special.

You will need to check the times guides for acurate closing times on the days that you are in the park, but here the ones from this week so you can get an idea:

MK:
The Liberty Square Riverboat
Hall of Presidents
Walt Disney World Railroad (depends on fireworks time)
Tom Sawyer's Island
The Enchanted Tiki Room
Country Bear Jamboree

Epcot:
Behind the Seeds Tour
*Future World is always listed as closing at 7pm, BUT, that does NOT include, Soarin, Mission Space, Test Track, SpaceShip Earth or the Living Seas (these attractions will remain open until park closing)

MGM:
Backlot Tour
Honey, I Shrunk the Kids Movie Set Adventure

Animal Kingdom:
It depends on when the park is closing, on a 5pm close (as it is this week) there is nothing that closes early. When the park stays open later, the potential is there for some things to close an hour or two ahead of the park depending on time of year and closing time.
