Atkins/Protein Power Questions on Side Dishes

Okay I am getting a little tired of Greenbeans, Broccoli, and Salad for side dishes for both lunch and dinner. What do you all do for side dishes? I'm looking at DH's noodles and salavating! LOL!

I'm thinking of making som WW soup for a side dish but leaving out the veggies I can't have any more. It is made of Tomato Juice, tomoatos, broccoli, Greenbeans, Cauliflower and I might throw in some Green Zucchini - that shouldn't be to many carbs right? and it will make my meals seem more filling to me.

Tomato juice is kinda high in carbs. Can you use chicken or beef broth instead as a base? Then add the veggies, and lots of chicken, or leftover roast beef or pork! Yummy!!

I steamed some cauliflower the other night, and then mixed it with cream cheese, and cheddar cheese, and a little butter. It was really cheesy, and really good! ::yes::

I also like to fry some bacon, chop it up, and throw it back in the drippings with fresh green beans, and chopped onion. Saute til beans and onions are tender. Very good!! (I've done this with cabbage too, instead of beans)
 
Mashed Cauliflower
Green Beans w/slivers of Ham
Green Beans Almondine w/ Butter
Zuchinni Stir Fried and topped w/ Parmesan
Cabbage fried in butter [gives it that brown buttered taste]

Zuchinni Boats - slice in half, scoop out the flesh, fry up with some burger and onion, put the filling back in the boat and top with cheddar cheese -- bake until bubbly

Bean Salad - Green Beans, Wax Beans and a little finely diced red onion, top with a dressing of oi & vinegar w/a little splenda to taste.

Zuchinni or eggplant lasagna - use the veggie in place of noodles then use the usual burger and cheeses and some low carb sauce.

I love to cook Caulifower tender and the 'smash' with a fork - top with your favorite baked potatoe toppings such as bacon, cheese, sour cream, chives, butter, etc. -- makes a nice gourmet 'mock' potatoe.

'Cream of' soups. Cook cauliflower until very tender in either chicken or beef broth. Puree' until the consistancy of the way you enjoy your 'cream of' soups. You can use cream cheese, cheddar cheese, etc in this broth also. Then fill with your favorite cooked veggies for a great cream of soup. Cream of Cauliflower, Cream of Broccoli, Cream of Asparagus, etc.

pre-blanched asparagus spears wrapped with bacon and baked until the spears are tender and the bacon is crisp.

I enjoy home-made cole slaw quite frequently. Shredded cabbage, mayo, grated onion, salt, pepper, and half a pack of Splenda.

The pre-made cole slaw packs in the Produce Dept are good to use instead of grating your own cabbage but have a few carbs from the grated carrots. Just be sure to include them in your daily count.

Zucchini sliced and nuked for a couple of minutes, then put back in with cheeses on top until melted.

Different toppings and cheeses on veggies give you a variety.

Sauteed radishes and zucchini slices are great sides.

Mashed cauliflower with butter, cream cheese and chives is a favorite in our house.

Deep fried or sauteed cauliflower florets are terrific, too.

Turnips make pretty good substitutes for fries... deep fried or baked (they don't get quite as crunchy, but they're yummy dipped in mayo!)

Turnips are also great instead of potatoes in scalloped recipes (I make a good one with blue cheese - yum!) - or roast them in butter and onion soup mix (don't forget to count the carbs in the mix - there are recipes for homemade lower carb subs)

Dehydrated zucchini slices make great chips - yummy with dips!

Not quite the season, but replace potatoes with cauliflower florets in your favorite potato salad recipe - delish!

Soups are a good side... veggie soups, egg drop soup... cream soups...

Spaghetti squash is a good side. And one squash can feed you quite a few times.

Turnip or zucchini shreds mixed with egg, and a little flour sub make great "faux"tato pancakes.

Thank you for the ideas! I am not a big cauliflower fan but I am going to have to try treating them like mashed potatoes.

How does one dehydrate Zucchini?

I'm also going to try the Zucchini Lasagna that sounds yummy! Although I wonder if you could make it with chicken and a white cream sauce instead. I one time make Chicken Lasagna that needed Alfrdo sauce and it was really really good.


I will try making the soup with a beef broth instead of tomoato juice - and I forgot I can actually add in meat! :) I'm use to WW where it is just plain veggie soup.

Cut tomato in half, and scoop out the "insides." Combine the insides with garlic powder and cheese(s) (whichever ones you like best). Refill the tomato halfs with the mixture. Broil for ~ 2 minutes. Mmmmmmm! :)
 
I love asparagus as a side dish, steamed with butter or steamed and then sauteed a minute or so in olive oil.

I love collard greens and turnip greens too, especially now that I can cook them with salt pork.

Cucumber slices with spreadable cheese are yummy. I love plain cucumber slices, too.

Artichoke hearts marinated in olive oil and seasonings, or sauteed with garlic and olive oil.

Sauteed mushrooms. Sometimes I'll weigh up an ounce of onion and sautee that then add raw mushrooms after the onions are done, or sweet peppers. I weigh peppers and onions so that I don't get a lot of carbs from them :)
