At 61 to 60 day changeover?

Today my MDE countdown says 62 days. Am I correct that tomorrow at midnight my FP window will open?

Yes I believe so. I am at 61 days today, and according to online Disney calculators I've used, I can do my FP tonight since tomorrow is my 60 days. I would think that means you would do yours on Sunday after midnight. That confused me too at first, but that's also how I did it my last trip and it worked out fine!

I have no idea why my counter says 62 because it is definitely 61 haha not sure where I messed up making it!

Yes that's correct......Sunday at 12:01am is your 60 day mark

I was so happy when I realized this too! Last time it was during the workweek but luckily I was able to get done and back to sleep quickly. We have a housewarming party to go to tonight and I honestly may take my laptop with me in case we stay longer than expect and just hole up in the bathroom for a few minutes! We will be there the same time as you (obviously haha) and I can't wait!! Good luck with your FPs!
