At 11 months what if you need 8 nights?

I'm pretty new to DVC and when I used it, it was just for a couple 7-night stays, so I had no problem booking the resort at the 11 month window (well then I changed resorts at 7 months).

We want to run the Food & Wine Half in November 2015, so I know when I could book for it (for 7 nights). However, this trip we actually need 8 nights as we are going Fri (nov 6) - Sat (Nov 14). We are at SSR so I know there are a lot of rooms. Do I book the first 7 nights on the day I'm able to book (Dec 7) and then call up later and add that last night? When would that be, not until Dec 15th? Or, do I wait a day or two and book the 8 nights at once? Even though SSR is big, I'm wondering if that sells out quick for race weekend.

SSR is our 2nd DVC and this is the first time we will be booking with that account. We own at BLT and haven't had a problem booking there but we are always at off times.

SSR will be open long beyond 11 months out. However, the methods to reserve 8 nights at 11 months out are to either (a) wait an extra day beyond 11 months out before reserving and then book eight nights, or (b) book 7 nights at exactly 11 months out and then call member services the next day and add the eighth night to your reservation.

And for additional info, the second method, (b) in the above, is sometimes needed for some highly demanded rooms in short supply, such as AKV club level. It has never been needed for anything at SSR at 11 months out for anytime of the year.
