Ash Wednesday/Lent/Mardi Gras 2023 recipes thread

You ask about Ash Wednesday every year like it’s a festive holiday. And you have been reminded it isn’t. For those who observe, it isn’t a feast. Most people fast. And then just have meatless Fridays during Lent.
Perhaps we should include Mardi Gras recipes, as that is a more festive day. I agree that Ash Wednesday and Lent are much more serious for those who observe it. I grew up in a denomination that took it seriously, and although the church I belong to now does not observe Lent, some of those early traditions carry on in my life to this day.

I like to read about different ideas for meatless meals. As much as I like mac and cheese, it’s nice to throw something else into the mix.

Absolutely agree! Meatless ideas are great. I just don't understand why this poster asks every single year about what festive Ash Wednesday dinner everyone is having when it has been explained multiple times. And of course it's not relevant to anyone who doesn't observe. I totally understand that. Meatless meals I can definitely take suggestions....we always end up with pasta, shrimp, or pizza on Fridays during Lent. I need to change it up for sure.
 
I meant this as a thread for meatless recipes for Fridays during lent. But Mardi Gras and Lent inspired recipes in general are fine too. I’m Catholic so I take the Lent season seriously. It is technically a holiday season, just more focused on reflection and sacrifice than the “holiday season during December”. I post it every year because the Disboards always has more new people join our wonderful community. I would call it a Feast Day but I don’t want this to be about religion.



 
i always thought it was so odd as a teen attending a public school in the 70's-despite the whole separation of church and state impacting public schools the district i attended STILL only offered a nasty meatless hot lunch on fridays during lent BUT the local catholic schools were responding the 70's 'great decline' in enrollment and in order to attract non catholic students went from only offering one hot lunch entree per day to TWO on fridays during lent-one decadently meat laden :crazy:


as for meatless dishes-look in a used bookstore for copies of the sda 'bible' of cookbooks-'an apple a day'. spectacular meatless dishes. loma linda and morning star products are great as well.

I knew what you meant Buzz and I like your thread.

If anyone has some easy fish recipes that they make, please post them. My DH is now diabetic, so all my awesome pasta recipes from past Lents are now something he shouldn’t eat (which is a real bummer, because we love pasta).

love this one-

1/3 cup dry sherry
3 tbsp low-sodium soy sauce
2 tsp sesame oil
1/4 cup finely chopped green onion
1 tsp freshly grated ginger
1 tsp freshly minced garlic
1 lb orange roughy fillets*

*Cod, sole, or flounder may be substituted for the fish.

Preheat oven to 400 degrees. Mix the sherry, soy sauce, sesame oil, onion, ginger and garlic in a small bowl. Place the fish fillets in an ovenproof casserole dish. Drizzle the marinade over the fish and bake for 12 minutes or until fish flakes easily.

it's from the south beach cookbook-very tasty (and super easy).

Just avoid the pancetta and add a healthy substitute like mushrooms)

Same here. I can’t stand seafood of any kind, including fish, and I don’t like lentils or tofu. I only like a couple kinds of beans, but in recipes with meat, so that is out. Some nuts are okay, and when all else fails I can eat a peanut butter sandwich. But cheese is usually my go to for a meatless meal too.

If I am not worried about including a protein, I will do a veggie stir fry with rice for a meatless meal. That is my favorite way to eat veggies. However, protein is important. Maybe I should toss a handful of cashews into the stir fry . . .
 
I'm not religious but sometimes (in years past, I've gotten out of the habit but this thread has inspired me to start again) I've given up something I enjoy that's not-so-good for me for Lent, as an exercise in self-control. Usually sweets, or once Coke Zero when I was practically addicted to it. One year I chose cheese and that was the hardest.

Most of these recipes look amazing, so I'm glad I opened this thread! I love beans and peas, but tend to prepare them the same way every time. Ditto for fish.
