What would it cover? Just an entree, desert, and non-alcoholic beverage?

Yes, even at Signature restaurants the regular DDP includes only the entree, dessert, and non-alcoholic beverage. To get an appetizer you must be on the DxDDP.

To OP: we enjoy the mushroom soup, mussels, buffalo, and wild boar. We used to love the berry cobbler before they changed it.
 
I've been there seven times in the past four years, the most recent less than eight months ago, and I've had excellent food and service each time. However, any restaurant (including CG, Jiko, and even V&A) will have bad nights, and what is bliss to one person is "ehh" to another. So, not discounting the off experiences of previous posters, I'd definitely give AP a shot. As has been suggested, the smoky portobello soup is divine, and the buffalo has never disappointed. The ambience is some of the best on property, and other than an overly chatty server once, I've never had poor service. This is the place to come for a romantic dinner--ask to be seated next to a window seat. The tables aren't packed together like Le Cellier, and the restaurant noise isn't overwhelming as can happen at CG. After the meal, stroll around the property, take in the geyser, and watch Wishes and the Electric Water Parade from the beach. Then again, if you don't go, Artist Point can remain one of the relatively undiscovered gems that it is. ;)

Although if I don't decide soon I may not get an ADR and that would decide for me, that wouldn't be good:rotfl:

We really enjoyed AP. The food was all delicious, and the coffee drink we had afterwards was wonderful as well. The atmosphere was delightful - quiet and peaceful, nice and cool. I will agree with something I read earlier - the dress code thing. If you're going to tell people to dress nicely, then enforce it. It wasn't a huge issue for me, but I did make sure my whole family dressed appropriately, only to find that I could have left my kids in their play clothes and let dh alone about how he dressed.
