We are hoping to arrive at the Poly at around 1:30 on our first day. If our room is not ready at that time are we able to use the pool? If so, assumming we would change in the bathrooms near the pool? Any feedback would be much appreciated.

Yep - your resorts' facilities are available to you from the minute you check in until midnight of the day you check out. Just pack a separate bag with just your swim stuff and you will be fine. Towels are provided at the pool so you don't need to even pack those.
