It’s been awhile since we went to WDW and me and my husband are staying at the All Stars, we are driving in. My question is on arrival day what is the earliest we can get to the hotel and park? (Can’t remember). But our tradition is always to check in (not get a room) grab a Mickey Waffle/refillabe mug have breakfast and then hit the parks early. So what time will security let me through the gate to park. Like stated I know a room won’t be ready that early but we like taking Disney transport.

If you are checking in that day, they should let you in. It is common for guests to be arriving at all hours, especially from international flights, etc. I doubt it would be any problem at all.
 
As long as it’s your check-in day, you should be fine. If you are driving, you can drive straight to the parks and park for free there. We did that at AK on one of our trips. Unless you are dropping your stuff off at bell services, you can just do online check-in and skip the lobby.
 
My husband and I just did this - had a super early arrival time, and we were let into Port Orleans to park and check-in around 6am. Our room wasn't ready, of course, but it was so nice to get check-in done and start enjoying our day!

I think any time after midnight they'll let you in the parking lot, but you can't "checkin" until the system switches over which is around 6/630.

Last May my daughter and I drove down to Pop getting in a little after midnight and had no issue getting in/parking. We slept for a few hours in the car and then went in/changed etc., checked in around 630 and then got breakfast and roamed around until our room was ready a lil after 9.

Certainly not ideal, however I'm much more awake for a night drive then any other time and since it was just 2 of us in the car decided it wouldn't be too bad to sleep in a few hrs. Worked out well.
