Ok you, have two princess meals. That's fun if you have little ones who are princess crazy but I'd choose one. Since it's a first trip I'd do CRT simply because it's a first trip and you get to eat in the castle.
I'd do CM for dinner to meet the fab 5 but only on the first night. It's an OK buffet and it's a great kick off place to get in the mood and see the characters but there is better food available however the festive atmosphere and the napkin twirling is really fun. The buffet is plentiful and you wont leave hungry but after you experience some of the better dining experiences you might be disappointed.
We had a nice time at Ohana for dinner but it isn't something I feel the need to do over and over. It was fun to see the fireworks. It is really a matter of if you like the sort of things on the menu.
I have only had BOG for lunch so I can only say the reviews I have read from people i trust have been stellar. Let me also say that I got tears in my eyes walking into the ballroom. It is breathtakingly beautiful. Now bear in mind I also have a 24 year old daughter who was 4 when she fell in love with Belle and Beast so it is the pinnacle movie from her childhood so I do have an emotional attachment to it.
We really liked Coral Reef. Some people don't. The Jack Daniels Mousse is pretty darn good.
Maybe, since you seem to really want to experience character meals you would consider breakfast at CM which is generally considered better food and having the Crystal Palace meal for either the early admission breakfast or lunch or dinner are good too. That would allow you to meet Pooh and friends and give you more variety in the characters you experience.
Tusker House in the AK also gets very good reviews. I've not been in years so I don't feel really like I can give great advice but it would give you a chance to meet Mickey and pals too.
