Are the dates, August 25 - Sept 1, a good time to visit US/IOA?
Will we be dissapointed by not seeing the fireworks and the parks closing early?
Do many people visit during this time?
How is the weather typically?

I searched on the trip reports board and didn't see many people posting about trips during this time.

We usually go these dates each year. The crowds are low and the weather is still hot. We think its a great time to visit! You will have Labor Day shortly after that and the crowds pick up for that.

In all our trips (most of them off season) we have never caught the fireworks and the parls close earlier. That doesnt spoil a thing there is always plenty to do and see.

Most schools are back by then so its quieter.
 
I've never been to Universal when the parks are open late or seen the fireworks. But, I've never been disappointed in the least.

The average high for your dates is 92 and the average low is 73. :)
 
I know this may sound weird, but I'm afraid the parks will be to dead. I think things would be more interesting with a little crowd. I don't want the rides and entertainment to be diminished because the folks that run the park know it is a slow time of year.
