So, we actually had a pest control company out to check after we found one sibgle possible bed bug just walking on the ceiling in our bathroom. He came out to collect the bug for testing and looked at the mattresses, in the attic, etc. turns out what we had was a bat bug but you can't distinguish the two with the naked eye. He also found where bats were living in a vent at the top of our house! Ick! Anyway, point of the story is that he said bed bugs can go up to 9 months without eating. So, if we'd brought home bed bugs when we were visiting family last Christmas it was totally possible none of us had ever been bitten.
The good news about the bat bugs is they feast on the bats and when they're run off for good we can expect the bugs will go too.
