Are the shops and restaurants open during EMH?

WE hope to take in the first hour or so of EMH to do some shopping and snacking (ahem, Dole whips and turkey legs) to SORT OF beat the crowds....I've heard the minimize after the first hour or so. So if you can tell me if the shops and restaurants/snack carts are open during EMH, it'd be appreciated!!

It really depends on the shop. From what I saw at MK, EPCOT, and MGM, the shops near the front of the park remained open. I believe "select" restaurants and snack places stayed open. The Land's food court, Main Street Bakery, and the hot dog place in MGM by Fantasmic were places open when I was there in June, and I ate at all 3. If you've got your heart set on a certain food or dessert, I'd def. say get it early just to be on the safe side.
