who do you think he works for :)

didn't know scones were scottish...hmmm...that won't work, then. any ideas for something irish, besides soda bread?

My MIL(and FIL) is from Ireland and she makes scones all the time. She also makes Irish soda bread, of course, and this "brown bread" which is pretty good but I couldn't tell you how to make it. I guess he wouldn't want to bring in Shepard's Pie or corned beef!

I would call her for ideas but I don't think I could take that stress right now LOL

FIL just got back from Ireland the other day. This is the first time he didn't bring us any of these "crunchy" candy bars. The sell them in our grocery store under the "international" food section.

Good Luck! I'm sure someone here will come up with some great ideas for you!

Your DH works for Guinness?

Ideas: harp, rainbow / leprechaun / pot of gold, shamrock, Irish football, hurling, St. Patrick.

my mother makes a traditional irish dish called Colcannon. It is cabbage and potatoes and bits of ham.

Irish are famous for spinning wonderful stories ~ leprechaun, banshee , pots of gold, poetry, love stories etc....Maybe he could say something about inspiration struck after a Guiness. Or do a multipart series spinning a fairy story out bit by bit with Guiness the link. An American goes to Ireland to dispell a legend and somehow becomes immersed in the legend (time travel) of course taking place in a pub drinking we all know what. Ireland is also famous for their fabulous horses, world reknowned Hunters and show horses. And guess what they feed these million dollar horses ~ you guessed it Guiness!!! Sounds like a fun project. Slainte

WAHOO THIS IS MY 1000TH POST !!!!!! and with a Liam, Kieran and Declan at home it was most appropriate.

Beef in Guinness is popular in the touristy restaurants here, but being a vegetarian I haven't a clue how you make it!
Colcannon in Ireland is a little different to in the UK in that we use curly kale. Basically, it is mashed potatoes, chopped onion softened in butter, and chopped curly kale. Mix it all together and serve piping hot with a lump of butter melting over the top. I love it personally and could eat it by the bucketload.
There is also a well-known dish called "Dublin Coddle", but being a Dubliner, naturally I haven't a clue what exactly it is! I'm sure you'd find a recipe if you did a search.
Hope this helps a bit.

I've had colcannon with kale also. There are also alot or recipes that use guinness, including cakes. You could do a search for these and make something with guinness in it. Does your dh really work for guinness. Wow, now i'm craving one. I love the draft bottles with the little floaty thin in them.

Found a recipe:

Dublin Coddle
Preparation time: 15 minutes
Cooking time: 1-1 A½ hours

Serves 4

Ingredients:
3 large onions, sliced
8 slices of bacon, 5mm/ A¼ inch thick
5 large pork sausages cut in chunks
1 kg/2lb potatoes, sliced
4 tbsp finely chopped parsley
300 ml/ A½ pint water or stock
salt and pepper

Method: Layer the onions, bacon, sausages and potatoes in a large saucepan or flameproof casserole, sprinkling half the parsley between the layers and seasoning each layer with salt and pepper. Pour on the water and stock, bring to the boil, then press a sheet of greaseproof paper on top of the stew. Cover with a tightly fitting lid, reduce the heat and simmer for 1-1 A½ hours, until the liquid is greatly reduced and the potatoes are broken down and thickening the liquid. Taste and adjust the seasoning, stir in the remaining parsley and serve hot, with soda bread and a glass of stout.
