Are the parks empty in the hot afternoons? Is it humid in May? We have been toying with the idea of going to MGM or Epcot after we get off the ship in May, but there is no way I will do it if it's really humid!
I've been sunburned in late February and it has snowed (if you want to call it that) in March. By the first of May, it could be in the mid 70s to the upper 80s depending on cloud cover, rain, and wind.
*** NOTE: Be aware that you can get sunburned on a cloudy day! It's not the direct sunlight, but the UV rays that go right thru the clouds. ***
Anyhow, the first of May is a good time to visit the parks. Its not TOO crowded. MGM and Epcot won't be as bad as MK - but be sure to get on the popular rides early in the morning (Tower of Terror, Rock n Roller Coaster at MGM; Soarin and Test Track at EPCOT). IMO, the Tower of Terror is the scariest ride of all the Disney parks.
If at all possible, Do NOT miss the late nite show, Fantasmic at MGM.
WDW ANNUAL PASSES: What we did was - bought one premium pass and the others were seasonal annual passes (with blackout dates). With the premium pass, we got free parking!! The blackout dates are during the really heavy seasons, like summer, so we wouldn't be going to the parks those days anyway.

Truth is, I wish we could spend a few days at WDW after the cruise, but I really don't see it happening. The kids will already miss 6 instructional days at school, plus I also work at an elementary school and they don't really want you to take vacation as it is during the school year if at all possible. I have a terrific prinicpal though who is ok with me leaving for a bit over a week, but I don't want to stretch my luck!
