After hearing Theresa and Kathy talk about the awesome Apple Cider Doughnuts they had while up for the GKTW meet, I decided I really wanted to try some. Since we live pretty far away from anywhere that would be selling them, I figured I was on my own.

I found an awesome recipe online and made them at home this morning! They turned out great! Both DH and DS inhaled them. :yay: I was so proud of myself that I had to come share here:

apple cider donuts

Yield: 12 large or 24 mini donuts

Prep Time: 25 min Cook Time: 12 min

For the chance to eat a doughnut when you're having to watch your calorie intake, this baked version is quite the treat. You will need a mini doughnut or bundt baking pan with 12 cavities or a 6 cavity doughnut baking pan for this recipe.

Ingredients:
granulated sugar for preparing pans
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
1 large egg, beaten
2/3 cup packed brown sugar
1/2 cup apple butter
1/3 cup pure maple syrup
1/3 cup apple cider
1/3 cup plain nonfat yogurt
3 Tablespoons vegetable or canola oil

Directions:
1. Preheat oven to 400°F. Coat pan with nonstick spray or oil. Sprinkle with sugar, shaking out excess.

2. In a mixing bowl, whisk together flour, baking powder, baking soda, salt and cinnamon; set aside. In another bowl, whisk together egg, brown sugar, apple butter, maple syrup, cider, yogurt and oil. Add dry ingredients and stir just until moistened. Divide half of the batter among the cavities in the prepared pan, spoon about 2 generous Tbsp. of batter into each cavity. Don’t fill them to the top or your doughnuts will lose their holes when the batter puffs up while baking!

3. Bake 10 to 12 minutes, or until the tops spring back when touched lightly. Loosen edges and turn the doughnuts out onto a rack to cool. Clean the pan, re-coat it with oil and sugar. Repeat with remaining batter.

4. Ice your doughnuts, if desired. Sift 1 cup powdered sugar and mix w/ 2 ounces light cream cheese, a dash of cinnamon and enough nonfat milk to create a spreading or dipping consistency. Dip tops of doughnuts into the icing, then set right side up on a rack to let the icing set.

I actually thought apple cider donuts were pretty standard everywhere once fall hits. They serve them all over here including specialty stores and grocery stores.

I'm glad you had a chance to make some! They are yummy!

I'd never heard of them before the podcast. I've never lived anywhere that had a Fall season, really. Not sure if that has anything to do with it or not.

I'm glad I was able to make them, too! They were amazing! DH has already requested a repeat. :)
 
Apple Cider donuts are pretty much unheard of in Florida.

Maybe it's because we dont grow apples.

if you ever find yourself in suburban detroit in the fall, get yourself to the Franklin Cider Mill - wonderful freshly pressed apple cider and yummy donuts (and tons of other good things)....They press the cider right there - you can watch them do it with the giant cider press...

Another favorite fall treat here is applesauce cake. I have also made apple cider pancakes and pumpkin pancakes. Mmmm....
 
I went to Atkins after the podcast and bought some donuts. I went UMass Amherst for undergrad and I remember when Atkins was a small store, it is so big now! I had to buy one of those candles too!

I pulled up their website while we were still listening to the podcast. :lmao:

Now that I've experienced the amazing apple cider doughnut scent, I'm thinking I might need to order one I those candles. :teeth:

Yankee Candle has an amazing Apple Cider candle that just came out. I love it! They also have a cider donut one!

I've never liked the ones from the grocery stores, though. Perhaps that's because I was spoiled when I was in college and could take a weekend road trip to Fo'castle Farms. Betcha Kevin will agree that theirs are the best! =)

I agree 100%.

I used to stand by that window and watch for the warm ones to be put on the shelf.

Fo'castle Farms was a regular stop for us when I was growing up...and even into my adulthood..

While I love living in Florida, and wouldn't consider moving back, Fo'castle Farms (and places like it) are one of the things I miss about the northeast.
 
Kringle Candle company has an apple cider candle that was inspired by the Atkins donut. That is why we wanted to try the donut after smelling the candle.

Just an FYI- if you like Yankee Candle you would really enjoy Kringle. It took the best of Yankee and put it in their store. I am glad I finally got to go to their store.
