Hot Taco Dip

1 lb ground beef
1 pkg taco seasoning
16 oz container sour cream
1 jar of salsa
1 can refried beans (if you like that)
Grated cheddar cheese

Brown ground beef and prepare as taco meat with the taco seasoning.

In a bowl, combine the salsa and sour cream.

Spread the taco meat into a 13X9 baking dish. Top that with refried beans(These can be omitted) and the sour cream/salsa mixture. Cover everything with cheddar cheese (or whatever cheese you like.)

Bake at 350 for 30 minutes and serve with nacho chips.

This was a staple for us when I'd visit my friends who were in medical school.

Peel and eat shrimp....Messy, tasty and satisfying.
 
I'm starting a second post to keep the ideas separate.

When my DH gets together with his friends, they are happy with slices of provolone and asiago cheese with cold Italian-style meats and crusty bread. The meats are usually capicola, sopressata and lonza. They usually have some pepper shooters with this "meal".

But, none of them cook, though. I'm impressed any of them take the initiative to even slice the meat, bread or cheese.
 
If you like shrimp this is good & EASY! You can use tiny whole shrimp but I just cut larger shrimp into small, bite sized pieces. Mix the shrimp with your favorite store bought cocktail sauce. Poor the mixture over cream cheese. Your guests spread on buttery crackers. Addictive!
 

A couple of "toasts" for you, both involve cheese (but no bacon):

Crab toast:
1 lb. crabmeat (lump blue is best, of course)
~ 1 tbsp good quality hot paprika (Szeged is best, or Penzey's if you need to order)
~ 1 cp. grated swiss cheese
1/4 cp finely minced onion (rehydrated is ok)
8 English muffin halves (the holes catch the juices; reg. bread gets soggy)

Lightly toss together the crab, paprika, and onion, mound on English muffin half and top with grated cheese. Broil until the cheese starts to turn golden. Cut in quarters or just serve whole.

and Cheddar-Onion Toast
(this was my late Dad's favorite football-on-TV snack)

dark rye bread, sliced
VERY sharp cheddar cheese, sliced
onion slices, thinly cut on the crossgrain for rings

Stack the ingredients in order: onion slice on cheese on bread, broil until the cheese begins to bubble. Cut in quarters or just serve whole. (GREAT with stout or a good porter.)
 
After consulting several of my friends on this subject we felt a bag of chips and a twelve pack would do nicely!:rolleyes1

Hot Reuben Dip

Ingredients

* 1/2 cup mayonnaise
* 1/2 cup Thousand Island dressing
* 16 ounces sauerkraut, rinsed and squeezed dry
* 8 ounces shredded corned beef
* 16 ounces shredded Swiss cheese

Directions

1. Preheat oven to 350 degrees F (175 degrees C).
2. In a small bowl, combine mayonnaise and dressing.
3. Spread sauerkraut into a 9x13-inch baking dish. Layer corned beef, Swiss cheese, and the mayonnaise-dressing mixture on top of the sauerkraut.
4. Bake for 20 to 25 minutes.

Serve with rye party bread

Candied Pigs are pretty awesome. I'm pretty sure I got the recipe here. 1 pkg cocktail smokies, wrapped in 1/3 slice bacon ea, toothpick it & roll in brown sugar. Put on sheet w/ edges lined with foil and bake 40 min at 325.

Another bacon goodie is my stepdad's speciality. Med-large peeled deveined shrimp wrapped in 1/3 bacon, sprinkled with garlic parsley, & grilled. Dip in mix of cocktail & horseradish.

My MIL made a buffalo chicken dip (warm) served with crackers. It had canned chicken, cream cheese, franks hot sauce, and I don't know what else but it was really good.
 
Chili Cheese Dip!

1 lb. cooked, crumbled ground beef
1 lb. Velveeta, cubed
1 8-10 oz can Rotel tomatoes and green chilles
2 tsp. Worschestershire Sauce
1/2 tsp Chili powder

Cook on high in crock pot for about an hour - stirring occasionally.
Serve with Tostitos.

I make a quadruple batch of this in a 6 qt. crockpot... and there is never any left.

I love to cut up Velveeta and add salsa, microwave until it's all melted and gooey, goes so good with tortilla chips. I always add some homemade salsa (which is also what I use in the Velveeta) and homemade guac to the table along with the cheese dip. Guys love them all! :)
I do lil smokies in BBQ sauce in my crock pot, I also have done these in teriyaki sauce, very good!!
I love to just take cream cheese and add onion soup mix, serve with crackers or plain Ruffles. YUM!
I have an artichoke dip that rocks but you have that covered already so I won't post it. :)
I've taken sour cream, added a pack of dry Ranch and some bacon and had that with chips or crackers.
I also love to have salami & pepperoni slices with different cheeses out, I serve it with jalapeno slices, banana peppers, sliced red onions and pickles.
You can do the jalapeno slices deep fried too, those are so good!! :) Serve with Ranch for dipping.
 
I am usually in charge of appetizers for dinner nights with my friends. We are a few guys who are pretty good at cooking but we know what we like. So far I have two major hits, a Spinach and Artichoke dip and Armadillo Eggs (Jalepeno filled with cheese and wrapped in bacon). I need a few more go-to apps. Hoping to get up to 4 or so that I can make with ease.

1. Bacon is always a winner
2. So is cheese
3. We are willing to broaden our horizons, but you know... bacon and cheese exist still.

One thing I never saw a man turn down was a cream cheese spread on a tray, spread salsa over top, shred lettuce, and black olive, jalapenos if desired. Some taco mex cheese over. then use scoops to dig in.
Men love it.

More difficult, is clean jalapeno's. place a slab of cream cheese in middle, wrap in a strip of bacon hook with a toothpick. grill or roast until bacon is done.

Yummo!

Cheese wiz with a salsa in microwave

Frozen borritos on a tray, salsa and shredded cheese

Huge skillet. bag of Pinto/or navy beans. dried, cover 2 inches of water, slab bacon slices on top or the water, bring to a boil. reduce to a simmer. later add spices. Pinto bean seasonings, chile, cumin, and ketchup.... or make it with brown sugar and mollases eitj Great Northern beans.
Let simmer 2 more hours.
 
My husband & all his male co workers love it when I make buffalo chicken dip:

Buffalo chicken dip

1 (8 oz.) pkg. cream cheese, softened
2 (9.75 oz.) cans chunk chicken breast, drained and crumbled
1/2 c. buffalo wing sauce (we prefer Louisiana brand)
1/2 c. ranch dressing
1/2 c. shredded mozzarella cheese

Combine all ingredients in a microwave safe dish. Microwave on high for 3 minutes and stir. Continue to microwave at 2 minute intervals and stir until cheeses are completely melted. Serve warm with chips or crackers.

Carole's Sausage Stars
Ingredients

2 cups (1 lb.) cooked crumbled mild or hot italian sausage, or hot or mild pork sausage

1 1/2 cups grated sharp Cheddar cheese

1 1/2 cups grated Monterey Jack cheese

1 cup prepared Hidden Valley Ranch Original Ranch Salad Dressing Mix

1 can (2.25 oz.) sliced ripe olives

1/2 cup chopped red pepper

1 package fresh or frozen won ton wrappers

vegetable oil

Preheat oven to 350. Blot sausage dry with paper towels and combine with cheeses, salad dressing, olives and red pepper. Lightly grease a mini muffin tin and press 1 wrapper in each cup. Brush with oil. Bake 5 minutes until golden. Remove tins, place on baking sheet. Fell with sausage mixture. Bake 5 minutes until bubbly. Makes 4 to 5 dozen.

The hit with the men in my life are these little beauties

Sweet Chicken Bacon Bites(a paula deen recipe with surprisingly no butter:rotfl2:)
1 1/4 pounds boneless, skinless, chicken breasts (about 4 breasts)
1 (1-pound) package sliced bacon
2/3 cup firmly packed brown sugar
2 tablespoons chili powder
Directions
Preheat oven to 350 degrees F.

Cut chicken breasts into 1-inch cubes. Cut each bacon slice into thirds. Wrap each chicken cube with bacon and secure with a wooden pick. Stir together brown sugar and chili powder. Dredge wrapped chicken in mixture. Coat a rack and broiler pan with nonstick cooking spray. Place chicken wrap on rack in broiler pan. Bake 350 for 30 to 35 minutes or until bacon is crisp.

I usually cut them a little larger as I find it takes longer for the bacon to crisp up than 30 mintues and I don't want the chicken to dry out.
They disappear everytime. I tripled the recipe last time and they still disappeared!

I make these quite often for my parties. They are easy to fix and they disappear in a flash. They are sooooo delicious!!
