I am attending a Holiday Cocktail party next week and offered to bring an appetizer. I want to bring something "hearty" since all we will have are the appetizers and there's little time to eat before hand.

My typical appetizers are shrimp cocktail, cheese platter, veggie platter - all stuff that the host will have already. I would love to bring something different - any ideas?
 
One of my standard apps to bring is stuffed mushrooms. I use a recipe that has no cheese in them (several folks in my extended family don't do cheese) and they have no meat for the vegetarians.

I have also done little chicken satay skewers with dipping sauces.

Do you have any good recipes? I love stuffed mushrooms but I have only ever made them with some prebought crab stuffing. LOL
 

These can be made ahead and frozen then just pull out and bake when you need them... that is what I do.

apx. 1 lb mushrooms
2 tbs finely chopped onion or shallot
4 Tbs. butter
1 cup Pepperidge Farm her stuff. mix
apx. 1/2 cup chicken broth
garlic salt to taste

clean shrooms, remove stems. Saute diced stems (I don't use all, maybe half) and onion in butter. Stir in stuffing, broth, and garlic salt. Stuff mushroom caps, place in shallow baking dish that has been greased with a bit of butter. Freeze at this point or bake in 350 oven for 20-25 min.

(the "vegetarian" in my family is fine with chicken broth but you could use vegetable broth to be sure)
 
Bacon wrapped pineapple

2 cans pineapple chunks - drained
1LB good bacon - cut into 1/3's
Toothpicks

Wrap a piece of pineapple chunk with a piece of bacon, skewer with the toothpick, top the toothpick with a 2nd piece of pineapple
place on a good draining rack - I use cooling racks over a cookie sheet.
Bake at 350-375 until the bacon is crisp.
Serve warm or room temp, these are delish
 
Herb Cheese rollups are great!

To serve 10-15 you need:

One roll crescent dough
One package Garlic and Fine Herb flavor Boursin cheese (bring to room temp)
1 1/2 cups finely chopped chicken, ham, or seafood (optional)
1 cup finely chopped veggies (broccoli, well drained chopped spinach, bell peppers, mushrooms) (optional)

Open crescent dough and roll into one large rectangle. Spread Boursin evenly over the dough. Sprinkle with meat and/or veggies, if using. Roll lengthwise like a jelly roll. Use kitchen shears to snip into 1" sections. You should get 24-30 pieces.

Place rollups on an ungreased cookie sheet and bake according to the directions on the crescent roll package. Allow to cool for 2-3 minutes and serve.

I love this one because you can do endless variations. Plain cheese rollups are delicious, but so is cheese & spinach or ham & cheese or chicken, cheese & broccoli. It's so easy to customize to your family's tastes.
 
I make a delicious clam dip:thumbsup2 It tastes like baked clams and there is never a morsel left. In fact, at one party I brought it to, a man actually licked the plate:sick:


1 sleeve Ritz crackers crushed
1 small onion finely chopped(I usually only use 1/2-3/4 of the onion)
1 can of minced clams with juice(6 1/2 oz)
1/2 stick melted butter
1/2-1/4 cup parmesan cheese
garlic powder
oregano
parsley


Mix it all up and bake at 350 for about 35-40 minutes. Until it starts to brown and bubble. Serve with Ritz crackers. I also cut up lemon wedges to squeeze over it.
 
Bacon wraped water chestnuts. I haven't made them but had them at a Christmas party this week and I could have eaten the whole tray by myself they were so yummy. The recipe was something like this, remember I haven't made them yet......
Wrap whole water chestnuts in half a strip of bacon, use toothpicks to hold the bacon. Bake at 350(in a casserole or baking pan) till the bacon is almost crispy, poor your favorite BBQ sauce over the water chestnuts and bake another 10-15 min, sauce should start to caramelize.
 
Another bacon wrapped recipe:

Package of Whole Dates
Pecan Halves
Thick cut smoked bacon
Brown sugar
Toothpicks

Cut the dates and insert a pecan half. Cut the bacon strips in half and wrap around the dates, then secure with a toothpick. Put them in a baking dish and sprinkle with brown sugar. Bake in the oven until the bacon is cooked.

I could eat an entire pan of these!

Another idea that is really, really simple, but tastes wondful: cut jalapenos in half and clean. Fill the halves with peanut butter. Add a pretty garnish and serve.
 
Bacon-wrapped little smokies:
1.Wrap each little smokie in bacon
2. Place in baking dish and sprinkle brown sugar over them
3. Bake until hot

Pinwheels:
There are a lot of ways to make these, but they are simple. Spread cream cheese on a tortilla, place thinly slice ham and swiss (or other cheese). Roll the tortilla and slice into pinwheels.
 
My family loves the bisquick sausage balls! They have cheddar cheese in them and are very hearty. You can just do a basic search for the recipe- I do every time just to make sure I remember it correctly, I make them from memory otherwise.
1 lb sausage (I like the hot kind), 1 cup shred ched (or more if you like) and 1 and a half cups bisquick. Mix together really well, add more bisquick if too moist. Roll into little balls (about 1 inch across), bake on sheet lined with parchment or foil for about 15-20 minutes at 350 degrees. And yum!:goodvibes
 
Pepperoni bread is very easy and always a big hit at my house.

roll out Pillsbury pizza dough (can also use fresh or frozen dough)
1 layer of American cheese on top
1 row of cheddar cheese slices the length of the bread
1 layer of pepperoni (I use the sliced from the deli)
roll and seal edges
rub with butter
bake at 350 until browned
 
I had these at Flemings Steakhouse. They are easy to make and taste fantastic. Fill a small leaf of lettuce with chopped boiled egg, chopped avocado and crab meat. Sprinkle with a small amount of crumbled bacon and chives. They served it with a thousand island vinaigrette but this really isn't needed.
