For the past 20 years my family has done a snack and movie night the night before Thanksgiving. Last year for DD HS graduation I bought one of those crockpots that have 3 small crocks. I have not used it since then. I am looking for ideas to utilize this.
I also would be interested in other ideas as well. I would like to add some variety to our usual pizza, chicken nuggets and chips.
Not for the crockpots:
Buffalo chicken potato bites
Bake chicken, add buffalo sauce and butter.
Blanch little potatoes (like fingerlings), until almost done. Cut in half, hollow out. Brush with butter, place under broiler to crisp (not hard). Add chicken, top with bit of blue cheese if desired (I used a smidge of cheddar as no one here likes bc). Place under broiler to melt cheese, toast edges. Drizzle with ranch dressing.
Potato chorizo bites
Blanch small red potatoes until just barely done (just until fork can just pierce the surface). Drain, cool, halve, and draw fork along the insides.
Toss with olive oil, oregano, salt and pepper. Toss into hot cast iron skillet (try to not let them touch each other). heat to sizzling, then put in 375 oven, turn every 10 minutes until very crisp and golden (about 30 minutes).
Cook chorizo sausages until done, drain and slice 3/4" thick. Place one sausage on to of each potato half (use toothpick to secure if needed). Squeeze a little lime juice over each, serve with avocados and salsa.
