Does the AP need to be activated when you check in to receive the rate or it is alright if you just have the voucher? Is this like with the seasons if you check in on the 5th do you still get the rate for your entire trip? If one member of my party has an AP and the other is getting a MYW ticket, can we add on the dining plan? Thanks!!!

Yes it is just like the seasons, the rate you check in on is the rate you get for your entire stay.

As for if it needs to be activated, probably not. I have heard reports where if you show them the voucher they will request you bring back the activated pass within 24 hours to prove that you activated it to keep the rate.

You can add the dining plan if you get a package. If you get an AP room rate you won't be able to get the dining. In order to get the dining you must get a package that includes dining, paying full price (rack rate) for your room and at least a one day base ticket for everyone in your party.
