If you buy an AP can you get Room discounts whenever or only certain times? Also, are they stackable? Meaning there is a fun and sun one right now, can you stack the AP discount on that?

There are only certain times when AP discounted rooms are available.
You can RESERVE any AP discounted rooms without actually OWNING an AP.
You only need to get the AP when your discounted room's trip starts.

The AP discounts are separate unto themselves and are not "stacked" on top of other discounts.

As robo said, its an either/or type thing. Compare all deals to see which will save you the most money. Sometimes free dining can be cheaper even though you have to buy tickets to get the deal. I have always found the AP room rates to be the cheapest for my family, but we travel in the low season and always stay deluxe and don't eat the "right" way to take the best advantage of the dining plan.

When you go on the Disney website to look at hotels and your logged into your MDE account, you can see the AP rate for every hotel if they have offers

You can also scroll down to the bottom of the disney home page and click on the little gift box. That lists all current offers.
