I have a DVC Gold AP, which will expire on January 3 2019. I currently have a trip planned beginning January 12, 2019. Will I be able to make FP 60 days out using the AP currently linked to MDE? (I plan to renew my AP.)

You will be able to book FP with your AP only AFTER you renew the AP.

If your trip falls outside the normal limit of "60 days before your AP anniversary date,"
it is sometimes possible to get Disney to allow you to renew PRIOR to the normal limit of "60 days before your AP anniversary date."

Even if you are not allowed to do this, you can always buy a multi-day MagicYourWay ticket
to cover the number of days of your trip, and then use the value of that ticket to help
pay for your AP renewal when you get to WDW.
 

It’s 30 Days out without a room reservation for an AP. You need a room reservation to book 60 days out
 

If you need to renew earlier than 60 days before your AP anniversary date,
call WDW Ticketing at
(407) 566-4985 (option 5)
Hours: 8:30am-4:30pm ET Mon-Sat.

Explain your "timing" situation, and they might arrange for you to renew at a date that will
allow you to pre-book your FPs at 60 days out.

If your explanation falls on deaf ears,
it will be a simple matter to buy a multi-day MYW ticket to cover your trip.

I would buy that ticket from an authorized WDW ticket discounter (like UndercoverTourist)
and then use that ticket's value to help renew your AP when you arrive.
THAT way, you'll actually save EXTRA MONEY on the renewal, due to price-bridging.
