AP and Fastpass +

We have APs that won't get activated until our trip in October 2017 where we have a room reservation at the Poly. When can I schedule our fastpasses? Is it 30 days or 60 days? The APs are showing up in MDE, is there anything else I need to do to link them to the account?

You will be able to make your FP+ at 60 days. There's nothing else you need to do, other than actually activate your AP once you get to WDW.
