I would LOVE to stay atArt of Animation for one night. I know I can explore without staying there (thank you to all who helped answer that) but now we're thinking it might just be better to stay for one night.

There are 5 of us (2 adults, 3 kids) so of course, they will make us get a suite.
If we leave one person off the booking and get a regular room are there any repercussions?

I know you need a magic band to access the pools. Are you allowed to bring someone not registered to stay there as long as they are with guests? I need to explore options because the suite prices are just way beyond what we can pay.

Any thoughts?

Yes. You will be removed from your current room, given a room that has an occupancy of 5 and charged rack rate for that room.

Officially, no. However you can ask the Lifeguard if it's okay as they are the ones who make that call.
 
You will need to book a suite or two regular rooms. Except for some DVC pool hopping privileges, guests not registered at a Disney resort are not allowed to use the pool facilities. The signs at the pool specifically state the pools are for the exclusive use by the resort guests. Why risk being thrown out of the resort and/or not being able to use the pool?
