Our eldest Dd will be 11 our next trip. I asked if she'd go on the Pirate Cruise to accompany her younger sisters. She agreed to go, but not entirely joyfully. ;) (I think the age limit is 10, but I'd feel better if all 4 Dd's were together. I figured if they had the room, they'd allow her safe passage.)

Are there any activities like the tea party or Pirate Cruise, for 11 yo's?

Tag fairy, are you out there? Can you see me? I'm waiting for your special pixie dust!!

I sent my children to "cooking adventures"at the grand floridian(the pirate cruise was full)My oldest then 10,did not want to go,but she had a great time(as did my other two)At this one they decorated chef hats and aprons, baked cookies and served them to guests in the cafe. There were cookies left so they took them to the rest of the party we were there with.Your 11 year old will probably have fun,she will get into the spirit of things and it will give you time to yourself.
