Anyone make wilted lettuce?

'Tis the season for fresh garden lettuce and we have it in abundance. I love wilted lettuce salad, but am looking for some variations.

Please share your recipes!
 

Here are some recipes I found--they are making me hungry for this!

1.

Ingredients
4 bacon strips, cut up 1/4 cup vinegar 2 tablespoons water 2 green onions with tops, sliced 2 teaspoons sugar 1/4 teaspoon salt 1/4 teaspoon pepper 8 cups torn leaf lettuce 1 hard-cooked egg, chopped
Directions
In a skillet, cook bacon until crisp. Remove from the heat. Stir in vinegar, water, onions, sugar, salt and pepper; stir until sugar is dissolved. Place lettuce in a salad bowl; immediately pour dressing over and toss lightly. Garnish with eggs. Serve immediately.

2.

Ingredients
5 slices bacon 2 tablespoons red wine vinegar 1 tablespoon lemon juice 1 teaspoon white sugar 1/2 teaspoon ground black pepper 1 head leaf lettuce - rinsed, dried and torn into bite-size pieces 6 green onions with tops, thinly sliced
Directions
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Remove from skillet, crumble and set aside.
To the hot bacon drippings, add the vinegar, lemon juice, sugar and pepper. Stir over medium heat until hot.
In a large bowl, combine the lettuce and green onions. Add the warm dressing and toss to evenly coat. Sprinkle with bacon and serve.

3.

Ingredients
2 eggs 1/2 cup milk 1/4 cup cider vinegar 1/2 teaspoon salt 1/4 teaspoon pepper 8 bacon strips, cut into 1-inch pieces 1 head iceberg lettuce, torn 1 large onion, sliced into rings
Directions
In a small bowl, beat eggs, milk, vinegar, salt and pepper until smooth; set aside. In a skillet, cook bacon until crisp. Remove bacon to paper towels to drain, reserving drippings; reduce heat under skillet to medium. Whisk egg mixture into drippings; cook and stir until thickened, about 3-4 minutes. Place lettuce, onion and bacon in a large salad bowl. Pour dressing over and toss well. Serve immediately.

I haven't, tell us about it!

Here's what we do:

Leaf lettuce from the garden (sorry, grocery store leaf lettuce just isn't the same)
Green onions (again preferably from the garden)
1 lb. bacon
Vinegar
Sugar to taste

Clean and dry lettuce and onions
Cook bacon
Crumble bacon into lettuce
Reserve and reheat bacon grease
Add vinegar - 1/2 cup is usually about what I use
Optional - add green onions to cook a bit if you prefer them more cooked
Add sugar to taste (we actually prefer no sugar!)

When boiling, pour over lettuce. Stir thoroughly to coat and enjoy!

I also like to add boiled eggs to the lettuce before I pour the dressing over.
 
Ok, now I understand what you are talking about, however I have only heard of it as spinach salad, not regular lettuce. And that warm bacon dressing is to die for. But Sorry no recipes, this is something I order when going out.
 
What about salad Lyonnaise? (fresh baby greens, with a vinaigrette dressing and a hot, lightly poached egg that you break and stir around) - the heat of the egg helps "wilt" the lettuce. I think the NY Times just ran a recipe.
