Do cupcakes count as cakes? :)

Question for you guys- What do you do when you have to fondant cover a cake but it needs to be refrigerated? I am making a cake soon and I would love to make a chocolate mouse filling, but then it would have to be refrigerated and I have to fondant cover and decorate it the night before- so I can't have it sit out all night and I don't want the fridge to make it "sweat."

I have always wondered how bakers get around this because wedding cakes sit out and have fancy fillings..? It gets very hot here and I don't want to poison my friends and family- haha.

Oh cute cupcakes! The chocolate chip cookie in his mouth looks SO good. I am off sugar (I did cheat and have a Paczki last week) and I might give my left foot for a chocolate chip cookie right about now.

Cute baby shower cake too! Perfect for a Disney lover!
 

Anyone have any easter cupcake ideas (no grass/jellybean ones) or a really cool easter cake?

My dd's bday is on Good Friday and we're having her party at a local theater to see the Peter Rabbit play, so I want something to fit the theme. I've hunted all over online and can't find anything I'm really crazy about
 
I did these last year and they aren't nearly as difficult as they look... Granted they aren't cupcakes but they're different.

(hopefully this picture works, if it doesn't..let me know)

They are panoramic sugar cookie eggs. Like the sugar eggs but these are made with sugar cookie dough.

Here are the instructions...

1. Find a larger egg mold. I use the purple Wilton silicone egg mold. You will use this to bake your eggs in.

2. Roll out your dough (I use No Fair Sugar Cookie (the recipe is on CakeCentral.com. Pillsbury dough will not work for this..you need something sturdy. Cut your dough with an egg shaped cookie cutter that is about the same size as the mold. You will want to roll your dough kind of thick. I'd say at least a 1/4 inch thick. You will want to cut a small hole out of one side of each cookie pair (the side that will have the "scene". It is important to cut the hole BEFORE you bake.

3. Place the cookies inside the mold and bake about 8 minutes.

4. Prepare your royal icing and water some of it down to a pretty thin consistency. You are going to "glaze" your cooled egg cookies in a thin white glaze. They will almost look like glazed pottery when they are done.


5. Let them dry fully and then assemble the front and back pieces with stiff royal icing. A circle of royal icing along the bottom of the egg will keep it from falling over.

6. The rest is up to you! Pipe in whatever scene//decor you want inside the hole and then cover the seams with royal icing. You can't see in the picture but I also put all the kids names on the back before I handed them out. The cookies stayed really moist inside and they were much more pleasurable to eat than real sugar panoramic eggs! If you have any other questions feel free to ask but it really is that easy!

I found the Wilton's cake decorating courses near me. I've been thinking of doing one. There is another professional cake decorating center here, too. But I thought maybe I should stick to Wilton's because if this is something I really love doing and I want to teach someday, (I used to teach art,) I would kick myself for not taking the Wilton's course to begin with.

Any thoughts on this? :)

The courses are wonderful - even if you don't decorate cakes for weddings. They give you a wealth of knowledge.

I no longer decorate cakes because I have pretty bad arthritis in my hands....I hope everyone else is busy decorating!

OMG I have been thinking of taking a cake decorating class. So nice to hear so may have had success. I wouldn't do it for a business, but I love making the cakes for my kids. I love the Buzz cake. My son would die and the cupcakes and babyshower cake are incredible! Are they expensive classes?
 
I just do them for DD and my cousins for their birthdays b/c DD has food allergies. They are not professional, but hey they are free haha!

no, haha, actually its just Betty Crocker cake mix, but her allergist told us to stay away from bakery items b/c of cross contamination. We haven't had a bad experience with Betty Crocker so thats typically what I'll use.

Did you freehand the basketweave, or use that new impression tool I've seen, where you lay it along the side, and just press on a basket weave texture? Your lines look so straight!

The basketweave is freehand.

The roses on top of the three tiered multi colored cake were made on a flower nail. They're buttercream roses using a tip 104.

The fantasy flowers on the blue pearl cake are made of gum paste. They're not made on the flower nail. They're made with a heart cutter, the ball tool, a foam pad and gum glue.

I have sculpting envy!!

I have made cakes for years; about 15 yrs and mine don't look anything like yours.
I have taken the Wilton classes, actually going to Chicago in 2001 for their big courses, and then back the following year to take the fondant class with Collette.
Then again back when I started I had no clue what fondant was. I don't make many cakes any more, just for family and good friends, so I am out of practice.
But I will post some of my older ones, I don't know if I've even taken any photos of cakes the last few years.

This one was my DD sweet 16, the only directions I got was CHOCOLATE. It was triple chocolate cake with choc ganache filling solid choc plaques between layers and hand made choc truffles surrounding the layers.

This cake is so easy but takes a ton of silver lusterdust, I get asked for this one alot (fishing's real big here)

This is one I took to a 4th of July BBQ. I had about a day and a half notice, at the time I thought it was so cute, but now I see how much more is possible with fondant.
