What's For Dinner Tonight? This was my contribution.


You might remember that after the DHS day, we headed back to Alison’s villa and did some preparation. There was a lot of vegetable dicing going on that night.







I also used some of this....







......placed it in the microwave and got some cooked rice.







I have to admit that I was really dubious about the cooked rice after it come out of the microwave. Short grain rice has a tendency to be rather unforgiving if you add a little bit too much water. And when it came out of the micro, I could tell that it wasn't going to be rice that I would be happy to cook with.



The rice weighed heavy on my mind for a couple of days. Until.....

......until, I got to Yak and Yeti. The rice they served me for lunch was exactly what I was looking for. A simple question to our server and I came home with two of these.







During the planning bit for tonight, AnneBerkery had volunteered to supply the protein. Thanks so much for this!








So, all up.....my starting ingredients:
  • Rice, 2 cups - cooked
  • Carrots, 4 medium sized - diced
  • String beans, a generous handful - diced
  • Eggs, 3 or 4 medium sized
  • Cooked Shrimp, I don't know how much AnneBerkery got but it was more than enough.
  • Kecap Manis, 1 - 2 tablespoons
  • Oil, 1 – 2 tablespoons
  • Garlic and ginger, about 1 teaspoon of each (but I used less for this recipe)
  • Salt and Pepper to taste




The ingredient on the list that had been the subject of a bit of pre-planning chatter was the Kecap Manis. It's sweet and slightly thick soy sauce that the South East Asians use for their cooking. The others hadn't seen it before and we did talk about where to source a bottle from. I was rather reluctant to bring a bottle all the way from Oz and take it on the road trip with me; but I would have if I had to (and maybe left it with franandaj to bring with her). In the end, luvchefmic and franandaj found some locally and they ended up getting a large bottle each. I think I was using the bottle supplied by franandaj for tonight's meal.



I normally use a wok but there wasn't one available at the villa. I ended up cooking the rice in two batches in the pan.



Cook the eggs in a moderately hot pan, like you would for scrambled eggs, in a little oil. Remove from the pan when still slightly runny.








Heat more oil to the pan. Add the garlic and ginger and toss for 1 - 2 minutes.








When fragrant, add the diced carrots and toss for a couple more minutes.








Add the green beans and toss for another minute.









Add the rice and toss together for a couple of minutes.







Add the cooked shrimp and about 1 - 2 tablespoon of the kecap manis to the pan.







Mix all ingredients together until the sauce is evenly coating the rice. Allow to cook on a low heat for 2 - 3 minutes or until all the ingredients are hot. If you start to hear the rice in the pan sizzling, toss quickly so that the rice does not burn at the bottom.



Remove from heat and place in a large dish.

DisMeet No#14: A Very Fun Night's Dinner CookOut





If you walk past the BCV pool and spa








down this way.








You'll find a little secluded spot away from the main thoroughfare areas.







Franandaj and bobbiwoz had confirmed that this area did exist.







More importantly, it had a very important element.








The pieces of meat have more frequent miles than you think. Franandaj froze it and brought it all the way in her luggage.







And she'd completed at least two or three practise runs that I know of where she cooked the beef on an open brazier with charcoal. She had come prepared with meat thermometer in hand.







Whilst we were waiting for the meat to finish cooking, we indulged in this lovely cheesy dip that franandaj prepared.







There really wasn't a lot of dip left...even before the mains were served!







To go with our meal, we were cooking portobello mushrooms on the grill as well.







We grilled the mushrooms and topped it with feta cheese and basil pesto. I was cooking the fried rice at this stage so I completely missed out on taking any pictures. But I'm hoping that they kinda came out looking like this.







We also had other sides to go with the meal. This was my first plate. It got way too dark and I was having too much fun to take any more pictures after this.







In case you're wondering, I do like my meat medium rare but this was just a little bit rarer than I take it. So, my meat did go back on the grill for another couple of minutes.
The food was delicious!





But the company? It was the best!







We had Fran and Alison, TifffanyD and her DH, bobbiwoz, AnneBerkery, luvchefmic and myself, my DH and DS at this meet.







Later in the night, we also had Leshaface and her DH pitch up as well.



We never did get round to taking a group picture. In fact, I had a distinct lack of pictures from this meet. That's how much chatting I.....er.....we were doing!



I ended up swiping these from DH. He seems to have been busy chatting as well!

DS came out for the food. Aside from these rare minutes, he pretty much stayed in our room all night. But as we were about 50 meters away, neither DH nor I had any qualms about him being by himself.







Bobbiwoz had done a run to the supermarket earlier in the day. We had plenty to drink and lots to snack on.







Luvchefmic and I had first Dis-met way back in May 2010. It was really lovely to see her again.







And in case you'd forgotten that DH had celebrated a birthday at WDW, I had made sure that we had a cake available for dessert.








There's a super long story associated with that cake.

The short version is that after debate with the other Dissers attending tonight's meet, I ended up ordering it from the Publix. Luvchefmic picked it up for me. But when she arrived at the BCV, she had two cakes in hand.

The one that was ordered, made and decorated for DH was deemed not quite up to scratch by the Publix person handing it over to luvchefmic. So, we ended up with a freebie cake as well. We could barely eat one....much less two!


Irrespective of how it looked, the cake was super moist and delicious.


And yes, I did think about ordering a cake from Disney; but in the end , the others figured that the Disney cakes were going to be OTT in terms of pricing and we would do just as well ordering one from Publix.


The freebie cake? Luvchefmic was the beneficiary of that cake. I believe she took it to work on the Monday to share the spoils with her work colleagues.



We had a great night cooking, eating and enjoying each other's company. There was so much food on offer! It was all delicious and I wish we could go back and do this night all over again. It was definitely one of the highlights of my time at WDW. It was so much fun hanging out with the other Dis-sers and doing the cookout.

What a wonderful dismeet and your fried rice sounds yummy! Sticky and yum just the way it should be. Love soy sauce so that soy sauce sounds the best.

Yum re the meat! That's one hunk of goodness right there. Drooling on the screen. How nice re getting a birthday cake for DH. Agreed the Disney cakes are on steriods! Massive Jo and I joke one cupcake would do us lol.

But you know what I am thinking now...Carvel :-)

That was a night that will forever be etched on my heart :grouphug: old friends new friends. I have been waiting for this post to snag the info on how to make the fried rice. In anticipation I have a nice big bag of cooked shrimp in the freezer. :thumbsup2

Ah the cakes, that day it was extremely hot. I was so afraid I would be arriving with 2 boxes each containing a chocolate puddle. It almost happened too when the security CM at the kiosk started to give me a hard time about entry. I forget what was going on that day but the resort was on a hard close ( only residents allowed in ) Ludicrous if I recall correctly some of our friends were actually turned away and told alternate ways to get back. Weren't they DVC owners too? That just adds insult to injury.

This stuck in my craw and I acted like a dog with a bone that wasn't about to give it up, so I did speak to someone after the fact. Later of course the CM was informed she was totally misinterpreting how to enforce restricted entries....for goodness sakes it would have be easier that day to visit someone in jail :rotfl2:

It was one of the best Dismeets I have ever experienced. I know we took very little pictures but that just shows how much fun we had. It was sad when the night ended.

What a fun dinner!!!!!!!!!!!!!!!! Great friends, good food, gorgeous location!

Impressed that Allison managed that over charcoal. I had never heard of that sauce, I am going to check it out. I seem to go back and forth on what sauce I use in my friend rice and none are quite exactly "it".

Great pics of the night. If I did get over there and join everyone there would have been no way I could have run the Tower of Terror 10 mile event. I think by the first mile I would have said that is it. Take me back to the resort :rotfl2:

Great pictures at AK. Loved the giant lily pads, I don't think I've ever seen them there before.
 
WOW! That was really fantastic. I just never would occur to me to do something like that at WDW. I know the villas exist and all, but to get people together and just relax and have a good time. That doesn't seem like a Disney vacation, but it also really feels like it would be a great part of one. Now I'm extra sorry we didn't move around our dates to join you!
 
Yay for the cookout night! That was a lot of fun and one of the best meals that we had on that trip! Forgive me if I post a few more pictures. Your DH wins for getting shots of the attendees, I think he got more than all of us combined!

I happen to like my meat still mooing, so it turned out fine for me. Boy did it take a few trial runs at home to figure out how to make it on an uncovered charcoal grill.
