How'd it turn out when thawed? Any tips? I'm considering making a big batch and then freezing it in servings in freezer bags so that I can just grab one and go when I run late.

If your talking about the sauce, not the noodles, I freeze the sauce, and it comes out fine. I do the same thing. Make a big pot and then freeze the rest of the sauce. :)

I don't see why it wouldn't freeze nicely. I freeze the sauce all the time. :thumbsup2

Actually - I was talking about making the whole thing - sauce + noodles - and freezing that in servings.

I mean, I see spaghetti in a lot of those freezer meals, so I was thinking it should come out ok. But wanted some experiences.

freeze the noodles and sauce seperatly. Together, I'm not sure it would turn out very well.

I froze spaghetti -- sauce, noodles & all, and put it in a huge ziplock bag. We ate it when we went camping & it turned out perfect. (I was really surprised, too.)

My mom used to do this when we were little. Let's just put it this way, I've never done it as I prefer al dente noodles to mush. LOL

I see the poster above me has done it successfully, so maybe there is hope, but I would never personally freeze pasta, the sauce however is a different story.

While I don't do it myself, I think the key is to undercook the pasta a wee bit.

That way it doesn't turn to mush being frozen in sauce, thawed and reheated.

The noodles always taste better fresh cooked. The sauce is different. I have frozen the noodles with the sauce once before and it dries out my sauce somehow. So I just cook new.

I always make extra noodles and refrigerate them. They are ok reheated, not as good as fresh, but it does make for a quick meal. If you don't expect fresh noodles I would think you could freeze the sauce and noodles together, you can do it for lasagna, it should be ok with spaghetti.

I have frozen spaghetti in individual portions and it nuked very well...just like Lean Cuisines.

My mom would always freeze the noodles and the sauce together and in corningware and it would reheat just fine.

I will cook a pound of penne for about 4 minutes less than the recipe calls for. Then, I run cold water over it. THen, I separate into 8 single serve portions, put in separate sandwich baggies and freeze. WHen I need a quick lunch, I will heat for 3 to 4 minutes in the microwave with some sauce. These are cheap easy and delicious "tv dinners". I have never frozen it with the sauce, but it would probably be fine...
The trick is to not cook all the way through the first time...

I think it works fine as long as the pasta is firm, but it is definately left overs. I like left overs for lunch, so I like to do this with almost any kind of casserole. I wouldn't serve it to company though.
