Anyone else not into the dinner shows on new ships?

You're confusing me. Why do you first say that they don't want you to skip the dining room and then say basically that you don't know why. How did you arrive at the conclusion that they didn't want you to skip the dining room?
Are you serious? I arrived at that conclusion because other venues close at 6pm? Are we playing a logic game?
 
If it's obvious, then why are you amazed by it?

Whether you think it was an upgrade in quality, it was expensive.
I was amazed you said they would have to hire more crew. I don't think they have room on the ship for more crew.

My guy/girl/person, you're arguing with me when we are saying the same thing. Whether they ran out of budget to hire more crew because they hired more entertainment staff or they ran out of crew berths because they hired more entertainment staff is immaterial. Donald's Cantina closes early because they can't hire more crew (you and I think). And other lines can do it because they don't have that extra entertainment staff/budget/berths.

There is finite number of beds for crew. I'm not an expert on the inner workings of cruise line staffing. I can say from cruising on Royal that the main dining room had a lot of empty tables every night because the passengers were dispersed among dozen or more dining options available. Royal doesn't lack on the entertainment staff.

Disney want's their guests in the dining room. They want the dining experience to be part of the cruise. If DCL decides to offer more options due to customers request. I'm sure they will find a way. I personally don't see them changing anything.
