Any Tours that don't require a theme park ticket?

Seems like it was already mentioned, however the Backstage Magic Tour ($275 for adults before any discounts and/or tax $250 with discount AND tax)) and Old Key West has a free tour of their kitchens...a couple of days during the weekdays.

The Backstage Magic tour was wonderful. You see the inner workings of Disney from backstage at the American Adventure to costuming and the central shops. You don't need a park ticket to go on the tour, but you also won't go on any rides. It was a great tour if you are interested in the backstage workings at Disney.
