Any Tips for Pecos Bills?

Getting ready to go back for our 2nd family trip in March, first was Christmas 17. The only thing my oldest two requested was to go to the "Taco" place. After talking to them figured out the meant Paco's Bills. We all loved the fact that you can have all the toppings you want or as few a toppings as you want. Great place to fill up the entire family.
 
Pecos Bills is make your own..... as an example if you order tacos it will be a shell with meat.. they actually have little plates by the fixings bar to fill and you can put your toping's on later... Good is up to a persons taste... I enjoyed it more in the past as in menus past I thought the food was far better. I did not find what we had good it was acceptable however but you can get a lot of chopped up salad and tomatoes and a few other things and make a nice messy side salad if you don't mind no dressing as that is in the end what you are paying for... it is more a place of a lot of more on the comfort food side.
 
Let me expound on the pig sty comment I made earlier. When we were there about two weeks ago, we arrived about 1PM for lunch. We ordered and waited for our food. Then we carried it over to the "fixin's bar". The fixin's bar was a mess, some of the pans were empty, others were partially empty, some had food all mixed up in them (thus, pig sty). We then headed over to get some forks and knives, but there were none in any place. None. All we could find anywhere were spoons. I went to take our food to a table, but many of the tables were dirty or hard to get to because other guests were spread out all over the place. I went back to try to find some forks and knives and they were refilling one of the dispensers. She filled one and walked away from the rest of the empty dispensers. The floor was dirty, the counters where you pick up condiments were dirty and a mess. It was rather disgusting. That was my last time at one of my formerly favorite places to eat lunch.
