For Universal I like to find all the Disney references. There are quite a few on Shek. One example is when a Tinkerbell lookalike flies into the wall like Donald does at Philharmagic. Also read all the posters in the queue at Shrek for lots of Disney references. There are also some at Horror Makeup show: "We don't have to be nice to you. This isn't Disney."

There are also some Mummy references on other rides. There is a store sign inside Men in Black ride called "I.M. Hotep." And there are several Kong references in the Mummy ride. One is a golden Kong in the treasure room.

A few of my favorites:

The piano in "Me Ship, the Olive". Play the colored keys (in the right order) for a surprise.

When heading into Suess Landing, veer to the right, down to the water, to "Sneetch Beach", a place most people don't know exists.

Just past the bridge to the Lost Continent (as you leave Suess Landing), there is a smaller bridge heading to Mythos. Stand there quietly and see if you can hear the troll.
