Any Rice Pudding Experts?

I cook for friends/family upon request. I recently had a request for rice pudding with crushed pineapple!
My Go To rice pudding recipe is the standard one where you cook the rice on low with milk, sugar, cinnamon and vanilla.

Imagine my surprise when I was researching recipes with crushed pineapple to see that they ALL use cooked rice, with heavy whipping cream and crushed pineapples with a tiny amount of sugar and no vanilla. What is really throwing me is the cooked rice.

Does anyone:
1. Have a pineapple rice pudding recipe that doesn't use heavy cream and cooked rice?
2. Do you think I could just add the crushed pineapple to my finished cooked rice pudding?

I love rice pudding and I think cooking it with the pineapple would ruin the consistency of it. I have had it both ways where its cooked with the milk, sugar or made after the fact with already cooked rice. I think I would go with the cooked rice recipe adding the crushed pineapple, squeezing it to minimize the juice and heavy cream. You could also do half heavy cream/half condensed milk to give it more sweetness and a thicker consistency and skip the added sugar. I don't see why you couldn't add a little bit of vanilla to the mix too if it's your preference.
