I'm trying to narrow down our tour options. I'll be traveling with me, dh, dd6, ddalmost3 & dh's aunt, uncle, cousin10. I know, we'd miss the show or dinner. In our case the show but currently the show is Who Wants to Be a Mouseketeer. I don't mind missing that show since, I already saw it. Anyways, is the sunset worth it? Also, would we make it back in time for dinner? Per old navigator's the sun sets around 7:30 to 8 pm and our dinner seating is at 8:30 pm. I just don't want to miss any dinners. What can I say, I love food.

I've been considering the Western Union Schooner as an excursion while we're in Key West, too. I'd love to do the sunset cruise but just like you, I don't want to miss dinner on the ship. We're considering the excursion that runs during the day instead of the sunset cruise, and we will be able to see the sun set from the ship, instead.
I'm curious to find out if anyone has done this though, and made it back in time for dinner. Currently it is listed as starting at 4:15pm and running for 3 hours which should get you back to the ship in time for late seating. But the sun set is much later in August when I'm sailing, so I know this excursion would have to start later in the evening, and therefore we'd miss dinner.
