Remember though OP is not going to any park so resorts and Disney Springs will only entertain for so long.
I didn't read the OP as no parks - just "some non park time!".
I would visit AKL to get a different view of the animals, see the artifacts in the lobby and if available the storytelling by the fire in the evening. Have a drink at the bar and maybe sample some appetizers.
Polynesian, visit trader sam's and then head outside to watch the MK fireworks from the outside deck.
Mini golf, lots of various activities at FW - (check for availability) renting water sprites, swan boats at the dolphin/swan (walking distance.)
Rivera roof top bar for fireworks viewing via skyliner.
Visiting the resorts, esp MK resorts and FW requires using Disney transportation. I would head to HS and use the bus except for Rivera.
If your going during the holidays I would add the GF and WL for the decorations.
Disney springs - bowling, hot air balloon or the aqua cars, Irish step dancers at RR and lots of live music at various restaurants and stages,
